Rhubarb Mint Julep Recipe

Simple Syrup
1/2 pound of fresh rhubarb, roughly chopped
1 cup water
1/2 cup sugar
1 sprig of fresh thyme
Cocktail
Fresh mint leaves
1.5 oz. rhubarb syrup
2 oz. bourbon
Directions
To make rhubarb thyme simple syrup: Combine rhubarb, 1 cup water, 1/2 cup sugar in a small saucepan. Bring to a boil, and then turn down to a simmer. Simmer for about 20 minutes, or until rhubarb is completely soft. Remove from heat. Add a sprig of thyme and stir.
Let mixture cool to room temperature. After about an hour, remove thyme. Strain mixture and pour it into a glass container. Refrigerate until ready to use.
To make the cocktail: In a cocktail shaker muddle mint with rhubarb simple syrup. Add ice and bourbon to the shaker, Shake until well chilled. Strain into a coupe glass. Makes one cocktail.
